Cheese & other Dairy Products ~ Food Pairing

Cheeses

Pretty well all cheeses go with wine, especially red wine!

Hard Cheeses e.g. Cheddar, Wensleydale and Red Leicester – apples, bacon, tomatoes, onions, leeks, beef, potatoes, good bread, broccoli, cauliflower and mustard.

Cream cheese, cottage cheese, fromage frais, mascarpone, etc. – berries and other fruit, black pepper, spring onion and cucumber

Bloomy rind cheeses such as brie and camembert – Champagne, bacon, apples and pears, sweet preserves, almonds, grapes, mushrooms of course and truffles.

Blue cheeses – port, brandy, black pepper, garlic, roasted garlic, black garlic, caramelised onion, balsamic vinegar, bacon, beef, pears, figs, dates, red grapes (especially sautéed grapes!), walnuts, and honey.

Goat and sheep cheese – sweet flavours such as grapes and honey, mint, dry cured ham and roasted vegetables.

Swiss cheeses and similar – cured meats, potatoes, grapes, olives, apples, pears and white wine.

Mozzarella – basil, parmesan cheese, tomatoes, oregano, pasta, dry cured ham, olives and sweet peppers.

Very hard cheeses such as gran padano and parmesan – tomatoes, basil, olive oil, garlic, nuts, pears, beef, dry cured hams, mushrooms, roasted squash, pasta dishes and red wine.

Other Dairy Products

Sour Cream – chives, dill, parsley, mustard, smoked fish, bacon, spinach, cucumber and hot spicy flavours.

Clotted cream – berries and other fruits, chocolate, golden syrup, cakes, pies, tarts, scones (of course), mushrooms and crab. Several ideas for clotted cream here.

Crème fraîche – berries, smoked fish, salmon and caviar.

Double Cream and Heavy Cream – butter, sugar, vanilla, berries and other fruits, cakes and other sweet bakes, coffee, chocolate, eggs, spirits and liqueurs, mushrooms, leeks, chicken, steak and I shall probably keep on adding to this ad infinitum!
