Meat, Poultry, Game, Offal ~ Food Pairing

Meats

Beef – blue cheese, black pepper, brown sugar, onion, horseradish, mustard, red wine, soy sauce, tomatoes, mushrooms, chilli, garlic, ginger, bay leaf, paprika.

Lamb – mint, rosemary, garlic and redcurrant jelly and with onions, leeks, potatoes, aubergine, apricots and warm spices such as cinnamon, cumin and turmeric.

Pork – apples, sage, fennel, beans and more pork in the form of bacon, sausages or black pudding, oregano and marjoram.

Veal – tarragon, dill, chves, celery, mushrooms and cream.

Poultry

Chicken – mushrooms, wine, cream, bacon, ham, leeks, garlic, lemon, chilli, curry spices and coconut.

Duck – honey, ginger, squash, sweet potatoes, hoisin, garlic and not just oranges but plums, cherries, pomegranate, blackcurrants and cranberries.

Goose – onions, mushrooms, mustard, parprika and rosemary.

Cured Meats and Charcuterie/Deli Meats

Bacon – tomatoes, avocado, cabbage, spinach, mushrooms, onions, potato, black pepper, most cheeses, beans and pulses, apple, bananas, liver, black pudding, chicken, seafood, maple syrup, peanut butter, eggs and breakfast.

Ham – maple syrup, brown sugar, honey, cloves, pineapple, melon, mustard, eggs and cheese.
